The region’s newest Zaxbys is set to open in Rocky Mount on Monday.
Final preparations are being made to the restaurant in the final week before opening. Kevin Schweiker with the Schweiker Group said their goal is to have staff trained and everything ready to open doors on Monday.
This will be the fourth Zaxbys for the Schweiker Group which also owns restaurants in Roanoke, Charlottesville and Winchester.
Schweiker said they decided to move to Rocky Mount after finding what was formerly the site of a Burger King that closed several years ago. The location on Tanyard Street had sat vacant for years.
“We kind of fell in love with the town,” Schweiker said of deciding to add a location to Rocky Mount.
Construction started on renovating the property in August. Schweiker said they saw a benefit in keeping much of the frame of the former Burger King while building the rest of the restaurant from the ground up.

“We realized the bones of the building were really good,” Schweiker said.
While Schweiker said they were glad to find a new use for the old building, renovations are more complicated and can take more time. They originally expected to open in late 2024, he said.
Even so, Schweiker has seen excitement from the community eager to learn when the restaurant will be opening. He’s hoping the community will come out for Zaxby’s unique offerings including chicken fingers and salads.
“We are really excited to open our doors and be a part of this community,” Schweiker said.
